Tamarind……

The looming Tamarind tree has been providing vital pools of shade in the Caribbean for over two centuries, since its introduction from Asia. It is the West Indian bus stop, meeting place, storytelling venue and shelter. Above all, it’s a pharmacy. Boil down the paste from the distinctive pods and add sugar to make a refreshing juice which is a mild purgative and immune system booster. Tamarind paste can also be added to dishes to give a tangy, sour ‘kick’, and is a key ingredient in the Worcestershire Sauce that’s splashed in a Bloody Mary.
