It is the West Indian bus stop, meeting place, storytelling venue and shelter. Above all, it’s a pharmacy. Boil down the paste from the distinctive pods and add sugar to make a refreshing juice which is a mild purgative and immune system booster. Tamarind paste can also be added to dishes to give a tangy, sour ‘kick’, and is a key ingredient in the Worcestershire Sauce that’s splashed in a Bloody Mary.
